What You’ll Need

• 1 can coconut cream

• 3/4 cup sugar

• 1 large can crushed pineapple

• 3 cups water

• Saucepan

• Stirring spoon

• Blender

• Serving glasses

• Ice

 

What to Do

• Pour coconut cream and sugar into a saucepan and stir to combine

• Bring the mixture to a boil, stirring frequently, and cook until all of the sugar has dissolved and the coconut cream is smooth

• Allow the mixture to cool

• Pour the crushed pineapple along with its juice and the water into the blender

• Blend until smooth

• Add the pineapple mixture into the sweetened coconut milk and stir to combine

• Pour over ice in the serving glasses

• To make a frosty beverage, replace half of the water with ice cubes and blend to a smooth, icy consistency

• If you miss the rum flavor in the beverage, add in a few drops of rum extract to produce the flavor without adding the alcohol

 

For extra fun, serve your pina coladas with skewered cherries and tropical beverage umbrellas.

• Yellow cake mix

• 1/3 cup vegetable oil

• 1/4 cup water

• 1 teaspoon coconut extract

• 1 can of whipped vanilla frosting or your favorite frosting recipe

• 3/4 cup shredded coconut

• Large mixing bowl

• Medium mixing bowl

• Cupcake tin

• Paper baking cups

• Electric mixer

• Rubber spatula

• Ice cream scoop

• Offset spatula

• Wire cooling rack

 

What to Do

• Preheat the oven to 375 degrees

• Place a paper baking cup in the cupcake tin to prepare for 24 cupcakes

• In the large mixing bowl use the electric mixer to combine the cake mix, oil, water, 1 teaspoon rum extract, crushed pineapple with its juice, and whole eggs until completely combined

• Scrape the bowl occasionally to ensure all of the ingredients get into the batter

• Use the ice cream scoop to evenly distribute the batter into the muffin cups

• Bake the cupcakes for 15 to 20 minutes or until fully baked

• Cool the cupcakes in the pan for 10 minutes before transferring the cupcakes to a cooling rack

• Cool for approximately 30 minutes or until completely cool

• Scoop all of the icing from the can into the medium mixing bowl

• Use the rubber spatula to stir in the remaining rum extract and the coconut extract

• Spread the icing on the cooled cupcakes and sprinkle with coconut
