What You Will Need

·        3 eggs

·        2/3 cups of canned pumpkin

·        1 cup of white sugar

·        1 teaspoon of lemon juice

·        3/4 cup of all purpose flour

·        1 teaspoon of baking powder

·        2 teaspoons of ground cinnamon

·        1/2 teaspoon of salt

·        1 cup of chopped walnuts

·        1/4 teaspoon of ground nutmeg

·        1/2 teaspoon of vanilla extract

·        1/4 cup of softened butter

·        1 cup of confectioners’ sugar

·        6 ounces of softened cream cheese

·        Mixing bowl

·        Large bowl

·        Mixer

·        15 x 10 x 1 inch baking pan

·        Wax paper

 

What to Do

·        Preheat the oven to 375 degrees F

·        Beat the eggs on high with the mixer in the mixing bowl for five minutes

·        Gradually beat in white sugar until the mix is lemon colored and thick

·        Add in pumpkin and lemon juice

·        In a separate bowl, combine the baking powder, salt, cinnamon, and nutmeg

·        Fold the second mixture into the pumpkin mixture

·        Grease the baking pan and line with the waxed paper

·        Grease and flour the paper

·        Spread the batter into the pan and sprinkle with walnuts

·        Bake for 15 minutes at 375 degrees F until the cake springs back when touched lightly

·        Dust a linen towel with confectioners’ sugar

·        Turn the cake out onto the linen towel

·        Peel off the paper from the cake and roll up in the towel, beginning with the short end

·        Cool the cake completely

·        In a separate mixing bowl add the 1 cup of confectioners’ sugar, vanilla, butter and cream cheese

·        Beat until fluffy and consistent in color and texture

·        Carefully unroll the cake. If it starts to crack, apply gentle pressure to the weakened area and continue unrolling

·        Spread the filling over the cake in an even layer, stopping one inch from the edge

·        Starting at one narrow edge, roll the cake again, ensuring that it is tight enough to hold together and create the pinwheel appearance on the ends

·        Cover or wrap firmly in plastic wrap and chill in the refrigerator for at least one hour before serving

·        Dust with the additional confectioners’ sugar and serve
